Its only when Spring rolls around that I can really embrues the new year. Easter is a religious time of year for some, but for me it is a time to celebrate new life, and appreciate all that we have.
Easter foods are some of my favourite. Hot cross buns, easter eggs, you name it, I love it! Easter nests are super easy to make, and are really tasty, so I'm going to share with you my fool-proof recipe for making them.
First things first, you will need a few things:
1 bar of milk chocolate (mine was 110g)
80g Cornflakes
Cupcake or muffin tin
12 paper cases
Mini Eggs to decorate (I used about one and a half packets, as I wanted to have 3 eggs on each nest, but one packet will be fine for 2 on each)

Step 1:
Heat a pan of water, until it is just boiling. Turn the temperature down until the water is just simmering.
Step 2:
Break up the chocolate and place into a glass bowl. Place the bowl over the pan, and stir until the chocolate is mostly melted, then turn the heat off, and continue to stir until all of the chocolate has melted. (try to resist eating the melted chocolate. I know its irresistible, but I know you can fight temptation)Step 3:
Measure out 80g of cornflakes and mix with the melted chocolate. I would recommend doing this on a chopping board, as the bottom of your bowl will be hot and maybe slippery.
Step 4:
Once the cornflakes and chocolate are fully combined, spoon the mixture into paper cases and press lightly with the back of a spoon to create a nest-like shape.
Step 5:
Decorate with Mini Eggs. I chose to put 3 on each, as I think this looks best, but feel free to add as many or little as you want.
Step 6:
Leave in the fridge until they are fully set, then enjoy your festive treats!
I really hope you enjoy these easy easter nests. I usually have to make a new batch every few days because they get eaten up so quick! As I always think with cooking, as you are the chef, it is only fair that you have the first one, you know, to make sure they are okay.
